Make pasta out of vegetables with a spiralizer.

Or, if you’re looking for more variety, you can buy a $30 spiralizer with seven different blades for many different “noodle” shapes.

Some of the most popular vegetables to use are zucchini, carrots, parsnips, butternut squash, and basically whatever you can fit into the apparatus.

Cooking the noodles couldn’t be easier. All you need to do is toss the spiralized veggies into a pan with some olive oil until it is cooked to your desired consistency. Toss in more veggies, meat, and/or your favorite sauce and you’ll forget you’re cutting carbs altogether.



Use strips of zucchini to make lasagna.

With just a few large zucchinis, you can easily make flat lasagna-style noodles using only a mandolin. Just cut off the two ends and use the mandolin to make your flat zoodles.
